New here! And with a recipe!

Hello! I'm new here! I just joined. My name is Caitlin, and I hope to be a domestic goddess in the future. I'm still in high school right now, but I cook, clean, do laundry, etc. for my entire family. I LOVE cooking! It's one of the very BEST things in the whole world! I cook for my boyfriend (future husband!) all the time, and I make EVERYTHING from scratch. I love keeping a house clean and tidy, and I love taking on the 'motherly' role, also. After high school though, I plan to go to college and get my bachelor's in Art Education, so I can become a certified art teacher. My boyfriend is coming with me and he's going to study to become a history teacher. After college, we're going into the Peace Corps for 27 months, and then back home to settle down. I want to get a job, build up some money, get a MUCH bigger house and start my family. I want no less than 3 children. I know that sounds ridiculous, but I love kids, and I want a FULL house. I want to take time off work to raise my family, but when all the children become school-age, I hope to return to work as a teacher, hopefully at the same school as my children. I want to be a mother that cooks a homemade meal EVERY night, and I hope to teach ALL my children (not just the girls!) the joys of cooking. I want to teach them how to read and write before they go into school. And I REALLY hope to continue to please my boyfriend (future husband). 

Anyway, that was just an introduction. And to complete my first post, I'm adding a recipe I tried today. It's SO GOOD! My boyfriend loved them!
Apple Strudel Muffins

2 cups self-rising flour
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 cup chopped apples
1 cup shredded apples
1 teaspoon cinnamon
1 teaspoon nutmeg
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
